This place is absolutely stunning. I have visited several times, and the experience is consistently exceptional. From the immediate greeting by the chef to every course and micro-course, the execution is flawless. The level of creativity is remarkable: maintaining a cadence of roughly one new dish every two days for years, without compromising quality, speaks volumes about the kitchen's capability. While it is not cheap, the complexity of the vegan fine dining and the strict seasonality justify the cost. It is the type of restaurant where you find yourself planning your next visit before you have even left.
